Overview

Science made our taste protein; you'll make the next one. As a Protein Scientist, you'll work at the center of Tomorrow's technology: the molecules that bring sugar-like sweetness with zero glycemic impact.

The role

You'll develop and characterize taste proteins from candidate screening through production strains, working across expression, purification, and stability. Your work is what turns “impossibly familiar and impossibly new” from a headline into an ingredient.

What you'll do

Design and run experiments across the protein pipeline, analyze results with the team, and move the best candidates toward ingredient scale. You'll partner with taste designers to connect what the data says to what the tongue tastes.

What you'll bring

A strong foundation in protein biochemistry or molecular biology and hands-on lab experience taking a molecule from bench to something real. You're rigorous, curious, and happy explaining hard science in a way that feels safe and approachable.

Bonus points

Experience with sweet proteins, precision fermentation, food-grade bioprocessing, or regulatory work for novel ingredients.
