A taste protein is a protein that Tomorrow has invented to create any delicious taste you can imagine on your tongue. TomorrowSweet™ is the first: the taste of sugar, in a simple protein.
What is a taste protein?
A taste protein is a protein built to taste like something: sugar first, then salt, cream, and tastes nobody has met yet. Tomorrow takes the same 20 natural amino acids that already build every protein in your body and creates new recipes from them. These recipes are built into the right shape to activate the taste receptors on your tongue and simulate any delicious taste you can imagine, all within a clean, simple protein.
How does a taste protein work?
Your tongue reads taste through receptors. Sugar activates the sweet receptor, and your brain reports sweetness. A taste protein is folded into a shape that activates the same receptor, so your tongue reports the same taste. The receptor cannot tell whether sugar or a protein built to fit it did the activating, which is why the taste is real rather than approximate.
Is a taste protein a sweetener?
TomorrowSweet™ does the job of one, but a taste protein is a different kind of thing. Sweeteners are small molecules that happen to trigger the sweet receptor, and most bring an aftertaste with them. A taste protein is a protein: your body digests it down to amino acids like any other protein, and its taste can be tuned recipe by recipe. Sugar is only the first taste Tomorrow has built.

Any delicious taste you can imagine. Sugar is first and in market as TomorrowSweet™. Salt (TomorrowSalt™) and cream (TomorrowCream™) are in development. Beyond the lineup, Tomorrow builds custom tastes to a brand's brief, including tastes that do not exist yet.
Are taste proteins healthy?
Your body reads a taste protein as protein, because that is what it is. It is fully digested, down to the amino acids you are made of, with no glucose response, no insulin response, and no microbiome effects. TomorrowSweet™ is also about a thousand times sweeter than sugar, so a product uses milligrams where it once used grams.
Who makes taste proteins?
Tomorrow Inc., an ingredient design company in San Carlos, California. Tomorrow invented the taste protein and makes TomorrowSweet™, the first one in market, launched with Lion Hydration in a drink sold nationally at Walmart.
