Brazzein is a small protein found in the fruit of the oubli plant (Pentadiplandra brazzeana), which grows in West and Central Africa. It is one of a handful of proteins that taste intensely sweet. Because it is a protein, not a sugar, it delivers sweetness without insulin spikes, glycemic impact, or gut microbiome effects.

Published measurements put brazzein at roughly 500 to 2,000 times sweeter than sucrose by weight, depending on concentration and the form tested. That is why a product needs so little of it: a pinch does the work of a spoonful of sugar.
