Why does my sugar-free drink still taste like diet, and what fixes it?
Diet taste is not one thing, it is three: sweetness that shows up a beat late, sweetness that will not leave, and a thinness where sugar's body used to be. Fix the first two and most people stop noticing the third.
What does diet actually taste like?
Ask people to describe it and they say bitter, chemical, thin, or that it hangs around. Underneath those words are two curves that do not match sugar's: high-intensity sweeteners tend to build more slowly than sugar and fade more slowly too, so the sweetness feels late and then lingers. The rest is the missing body of the grams of sugar that are no longer there.
Why do the usual sweeteners do this?
They are small molecules that happen to trigger the sweet receptor, and each has its own timing and its own side note: many people report a bitter or licorice-like aftertaste from stevia, a fruity or metallic edge from monk fruit at higher levels, and a lingering sweetness from sucralose. Blending them spreads the flaws around rather than removing them.
What do brands do about it today?
Blend sweeteners, add masking agents, add acids and aromatics to distract from the aftertaste, and rebuild mouthfeel with gums or bulking sweeteners. Each step is a formulation project and each adds a line to the recipe.
What changes when the sweetness comes from a protein?
The timing. TomorrowSweet™ is brazzein, the sweet protein from the oubli fruit, reimagined so the sweetness arrives up front and does not linger; version 1.9 is 90% identical to sugar in taste. With the two timing problems gone there is nothing to mask, so the blend and the masking agents can come out of the recipe.
Does it fix the body and mouthfeel too?
No high-intensity sweetener does; body comes from the grams of sugar that are no longer there. Formulators rebuild it with the usual tools, and once the taste is right most people stop noticing the difference. Tomorrow's team helps with that, from bench to launch.
Is it proven in a drink?
Yes. Lion Hydration's drink sweetened with TomorrowSweet™ launched nationally at Walmart. TomorrowSweet™ is heat and pH stable across common processes and is used in milligrams, so it is calorie-free in use.
Diet is a timing problem. Timing is fixable.
Sugar's sweetness arrives fast and leaves clean. A protein built to do the same makes diet taste stop being the price of zero sugar. Request a sample and taste the difference in your own base.
