Brazzein in beverages

Does brazzein work in beverages?

Yes. Beverages were the first place TomorrowSweet™ went to market: Lion Hydration's drink sweetened with TomorrowSweet™ launched nationally at Walmart. Water, hydration, sparkling and juice-based drinks are all inside brazzein's working range.

Is brazzein heat stable?

Yes. Published work shows brazzein keeps its sweetness after two hours near boiling, and across a pH range from about 2.5 to 8. That covers hot fill and pasteurization for most drinks. TomorrowSweet™ is heat and pH stable across common processes; ask for the spec sheet for yours.

How much do you use?

Milligrams per serving, where sugar needs grams. TomorrowSweet™ is about a thousand times sweeter than sugar. Exact usage rates for a target sweetness come with a sample.

What about the sweetness curve?

This is where regular brazzein falls short of sugar: sweetness arrives a beat late and lingers after sugar's would have faded. TomorrowSweet™ is brazzein reimagined to fix exactly that. Its sweetness arrives up front and does not linger, and v1.9 is 90% identical to sugar in taste.

Does it replace sugar's body and mouthfeel?
