Brazzein vs stevia

Brazzein is a protein. Stevia is a group of small molecules extracted from a leaf. Both are hundreds of times sweeter than sugar with none of it. They taste different, behave differently in a product, and your body handles them differently.

What is stevia?

Stevia is the everyday name for steviol glycosides, the sweet molecules extracted from the leaves of Stevia rebaudiana, a plant from South America. The best known are rebaudioside A and rebaudioside M, usually shortened to Reb A and Reb M. They are roughly 200 to 350 times sweeter than sugar and carry no calories.

What is brazzein?

Brazzein is a small protein found in the oubli fruit of West and Central Africa, one of a handful of proteins that taste intensely sweet. It is roughly 500 to 2,000 times sweeter than sugar by weight. TomorrowSweet™ is brazzein reimagined: the same natural amino acids, rebuilt for better taste.

Which tastes more like sugar, brazzein or stevia?

Brazzein, in most tasters' reports. Stevia's known flaw is a bitter, licorice-like aftertaste that grows with the sweetness level; newer glycosides such as Reb M are cleaner, though many products still pair stevia with other sweeteners to cover it. How does the body handle each?

Differently. Steviol glycosides pass through the small intestine undigested, are broken apart by gut bacteria, and the remainder is processed by the liver and excreted. Which is easier to use in a product?

Both survive heat and the acidity of most drinks. The difference is what they leave behind: stevia's aftertaste has to be masked or blended away, which is a formulation project of its own.
