Brazzein vs monk fruit
Monk fruit sweetness comes from mogrosides, molecules extracted from a small fruit grown almost entirely in southern China. Brazzein is a protein. Both are far sweeter than sugar with none of it, and they differ in taste, supply and what your body does with them.
What is monk fruit?
Monk fruit, or luo han guo, is the fruit of Siraitia grosvenorii, a vine grown mainly in Guangxi, China. Its sweetness comes from mogrosides, above all mogroside V, which is roughly 150 to 300 times sweeter than sugar. Monk fruit extract carries no calories and, in retail sweeteners, is usually blended with erythritol or other bulking sweeteners.
What is brazzein?
