I want a sweetener that isn't stevia or monk fruit. What are my options?
Most people who say this have tasted the aftertaste and want out. The older options trade one aftertaste for another, or add bulk and cost. The newest option is not a sweetener molecule at all: it is a protein that tastes like sugar.
Why do so many people want to avoid stevia and monk fruit?
Taste, mostly. Many people report a bitter or licorice-like note from stevia that grows with the sweetness level, and a fruity or slightly metallic edge from monk fruit at higher levels. Both linger after sugar's sweetness would have faded. Products often blend them with other sweeteners to cover it, which is a sign of the problem, not a fix.
What are the usual alternatives?
Sucralose and the other high-intensity sweeteners, which some people find leave a lingering or chemical-tasting sweetness. Sugar alcohols like erythritol, which taste clean but need to be used in quantity and can cool the mouth. Allulose, a rare sugar with about seventy percent of sugar's sweetness, which needs bulk too. And blends, which are the industry's way of hiding each ingredient's flaw behind another's.
Is there an option that actually tastes like sugar?
A protein can. Your tongue reads sweetness through a receptor, and a protein folded to fit that receptor tastes sweet without being sugar or a sweetener molecule. TomorrowSweet™ is that protein: brazzein, the sweet protein from the oubli fruit, reimagined so the sweetness arrives when sugar's would and leaves when sugar's would. Version 1.9 is 90% identical to sugar in taste.
What happens in the body?
It is a protein, so your body digests it down to amino acids like any other protein, with no glucose response, no insulin response, and no microbiome effects. It is about a thousand times sweeter than sugar, so a product uses milligrams where it once used grams, which is why it is calorie-free in use.
Does it hold up in a real product?
Yes. TomorrowSweet™ is heat and pH stable across common processes and is in market today: Lion Hydration's drink sweetened with TomorrowSweet™ launched nationally at Walmart.
How do I try it?
Brands and formulators can request a sample and get formulation support from bench to launch. Anyone else can taste it in LION at Walmart.
You were not wrong about the aftertaste.
Every sweetener so far has asked you to accept a taste that is not sugar's. A protein that tastes like sugar does not ask that. TomorrowSweet™ is brazzein reimagined: the same natural amino acids, rebuilt for better taste.
